One pot chickpea tomato curry. If you guys don’t have garam masala, I am telling you to invest in some. I got my first jar a few months ago, and I seriously make curry all the time now and omggggg it is night and day better than curry I used to make. I’m going to drop the #recipea here for you in case you want to click save to have it on hand for later. I made this one in my @ninjakitchen but it could easily be done stovetop as well.
1/2 cup onion
6-7 cloves of garlic, diced
One head cauliflower, cut into chunks
One canned coconut milk @naturesgreatestfoods
1 cup crushed tomatoes @tuttorossotomatoes
1 cup frozen peas
1 cup broccoli
One canned chickpeas, drained
2 cups spinach
1 teaspoon garam masala @jansalvalley
1 tablespoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
? simply sauté the onions and cauliflower with either olive oil or aquafaba if you are oil free. Honestly I was multitasking here and let them sauté for like 25 minutes, but it made them the cauliflower a little crispy and quite perfect. I will never cook it differently in the future.
? add the rest of your ingredients and cook on medium – high heat for about 15 minutes. Serve with rice or as is. Enjoy!
