One Of My Go-to Favourite Recipes To Whip Up For A Quick And

One of my go-to favourite recipes to whip up for a quick and delicious dinner – Chilaquiles con Salsa Verde.

Ingredients:⁣
• 6 small white tortillas⁣
• 1 ripe avocado⁣
• 125 g cherry tomatoes ⁣
• 1 lime⁣
• 1 can crushed tomatillos⁣
• 2 organic eggs⁣
• 30 g feta cheese⁣
• 1 large handful grated mozarella ⁣
• 1 spring onion⁣
• 5 g coriander⁣
• 1 green chilli ⁣
• Olive and Vegetable oil⁣
• Salt⁣

Recipe: ⁣
Preheat the oven to 200 c. Chop the coriander, including the stalks. Slice a couple rings from the green chillies, and dice the rest. Combine your chopped coriander, diced green chilli, juice of half a lime and can of crushed tomatillos along with 1 tbsp of olive oil and a generous pinch of salt. This is your salsa verde – set aside.⁣
Finely slice the spring onion and chop the cherry tomatoes in half. Cut the avocado in half and slice finely lengthways.⁣
Stack the tortillas and slice them into strips. drizzle with olive oil and put into the oven for 8 minutes, or until they begin to lightly brown. Once ready, cover the tortillas with your salsa verde, chopped tomatoes and top with a generous sprinkle of grated mozarella until the cheese has melted.
In the meantime, crack the eggs into an oiled non-stick pan over medium-low heat and cook covered for 2-3 min. ⁣
Once ready, remove the dish from the oven and top with sliced avocado, crumbled feta, fried eggs, spring onions and remaining green chilli.
