On weekends we do brunch..

Corn fritters with tomato chutney.

I also make mini versions of these for my toddler. They are a great lunch box filler, although apparently he can’t have pack lunches at nursery because of Covid. I have also heard that some kids are only allowed pack lunches, also because of Covid. ??‍♀️ Go figure!

Recipe:
1/2 cup flour
1/4 cup corn flour
1 tsp baking powder
1/2 tsp salt
1 tsp garlic powder
1/2 cup + 1 tbsp plant milk
1/2 cup roast red pepper, diced
3 spring onions, chopped finely

Mix the dry ingredients together
Then add the milk and whisk until the batter is smooth.
Then fold in the veggies.

Heat a little bit of oil in a non stick pan on a medium heat.
Use a measure to spoon the mixture into the pan so the fritters are the same size.
Cook for 2 – 4 minutes on each size depending on the size of the fritters.
