💖Recipe below ⤵ (Makes 12 mini muffin bites, 6+ muffin size, or one small round cheesecake)

💖Base
70g / 2/3cup almond meal
40g / 1/3 cup coconut flour
2 Tbsp / 40ml coconut oil melted
2 Tbsp / 40ml rice malt syrup
Mix in a bowl and press into a lined tin or silicon molds

💖Filling
1 cup cashews / 140g (soaked for 30mins in boiling water or overnight) then rinsed and drained
1/2 cup coconut cream or milk
1/3 cup coconut water
30ml coconut oil
25g cacao butter
1 tsp vanilla extract
1/3 cup Natural sweetener (white stevia/erythritol, xylitol, coconut sugar, maple, rice malt) (more to taste)
1/4 tsp salt
Blend all ingredients in a blender until smooth
Divide into 4 portions
1/4 – Leave for icing swirl
1/4 – Leave for White Layer
1/4 – Mix with 30g blackberries for mid purple
1/4- Mix with 70g blackberries for dark purple
Place in the freezer for a few mins to harden a little if required to make layering easier

💖Spoon over bases in desired patterns
Chill cheesecakes in the fridge or freezer overnight
Can be stored and eaten from the freezer. Thaw for a few mins prior to consuming

💖Ice the cheesecakes with the remaining cheesecake mix. Place chilled mix in an icing bag and pipe over cheesecakes.
Blend in further berries to change the colour if desired💞
