OK. Very proud cooking moment here. I made these crumbed tofu nuggets out of my own homemade tofu, and it was (as humbly as possible) the nicest tofu I’ve ever eaten ?. It’s softer, milder and creamier than store bought tofu and is made from only 2 ingredients!! Tofu recipe is from @marystestkitchen and I’ve saved the process in my highlights. I actually can’t wait to make my next batch!
To make the nuggets – tear tofu into chunks. Mix approx 1/4 cup soy yog with 1 tsp Dijon mustard in one bowl. In another bowl mix 2 tbs lupin flakes (@thelupinco), 3 tbs nutritional yeast, salt, garlic, onion power, a pinch of cayenne pepper powder and mixed herbs.
Dip tofu in the yogurt mix, then the crumbs. Place in airfryer and cook on 180deg for 20mins (you cold also pan fry or oven bake)
I’m not sure how I’d calculate the macros for the homemade tofu, so I haven’t. But I’m confident it’s nourishing and protein packed!
