Oil- free Mint/ Pudina Red Poha/ Flattened Rice !!!
Yes, this is a zero oil dish which is a variation to my original Pudina Rice recipe by substituting poha for rice and dry roasting all the ingredients. I have used red poha ( gluten- free), u can also make it with the regular poha or rice using oil.
I didn’t expect this oil free recipe to be tasty! All thanks to Mona @deliciouslynaturalme for encouraging and suggesting me on how oil and sugar free recipes could be made interesting,delicious and healthy.
☘️ Firstly wash the poha, drain and keep aside. Make a ground paste of mint(1cup), coriander (1/2 cup) and green chillies. I was a little generous with chillis🌶 , you can adjust it according to your spice level.
☘️ In a pan, dry roast cumin seeds, once they pop, roast onions for 2-3 minutes, add the carrots, roast it(2 minutes) and then add the ground mint paste with little water, add coriander powder and let it cook until the raw smell of the chillis goes. Add the poha to it, mix well until it is incorporated well with the mint paste.
☘️Garnish with grated coconut which is optional.
☘️ Serve with your choice of raitha.
Notes: If cooking with oil add little ghee also.
Do not keep the raw mint ground paste for longer as it gets discolored.
