Oil-free Lobia (Black eyed peas/beans)

Nothing beats a steaming hot, comforting bowl of lobia on a wet and blustery day. We like tucking in with wholemeal pita bread or on it’s own with a spoon 😋😋

Ingredients

1 small onion – finely chopped
2.5 medium tomatoes – chopped
2 green chillies
1 cube frozen garlic paste
2 cups lobia (black-eyed beans) soaked overnight
A pinch of turmeric
Pink Himalayan salt to taste
Chilli powder to preference
1-2 tsp @nationalfoodspakistan garam masala
1- 2tsp chaat masala

Method

Turn on the saute mode of an @instantpotofficial and brown the onions by deglazing the pan when they start sticking to the bottom. Keep repeating this process till the onions are browned
Add the garlic and cook this for a minute or so, deglazing if necessary
Add the tomatoes and cook them till they are nice and soft and appear saucy – add water and deglaze when necessary
Add the green chillies, lobia and all the spices
Add enough water to completely submerge the beans and give it a good stir
Turn off the Saute Mode and cook the beans on high pressure for about 45 mins with a Natural Pressure release
Once cooked if there’s too much water turn on the saute mode and cook this till the desired gravy/thickness is attained
Adjust any spices and seasoning during this process
