Oh heyyyyy! Back with a lil’ fun Friday recipe that’s refined sugar- free, gluten-free and vegan. These bad boiiis are pumpkin oatmeal chocolate chip muffins and are the perfect snack (or breakfast even) imo 😌. To make: Preheat oven to 350 F. mix wet ingredients in a bowl. 1 cup canned pure pumpkin, 1/2 cup unsweetened applesauce (or sub a small ripe Banana here is you don’t have apple sauce). 1/3 cup coconut sugar, 2 flax eggs, 1.5 tsp vanilla, 2 tbsp melted coconut oil, 1/3 cup of plant-based milk (I used @earthsowncanada unsweetened soy). In another bowl mix all dry ingredients: 3/4 cup oats (I used @bobsredmill gf oats), 1 cup @bobsredmill 1 to 1 gf baking flour (you could sub regular flour if not gf), 1.5 tsp cinnamon, 1 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp nutmeg, 1/4 tsp salt, 1/8 tsp allspice + 1/3 cup chocolate chips (I used @enjoylifefoods vegan mini chips). Scoop muffin mix into a lined muffin tin and top with extra oats and chocolate chips. Bake for 18-20 mins. Makes 12 muffins. ENJOY! 🥰
