Oh crepe! It’s only Tuesday🤯

This insanely creamy, delicious chickpea crepe stack smeared with layers of avocado pesto and a cauliflower paste is sure to make you smile🤗

Cauliflower paste:
3 cups of cauliflower florets
1 1/2 cups vegetable stock
1 large onion finely chopped
1/4 cup yoghurt
1 teaspoon dried thyme
Olive oil
Salt and pepper to taste

•Add some olive oil and shallots, sauté until translucent
•Add the cauliflower, thyme, salt & pepper and vegetable stalk
•Bring to a boil
•On a low heat cover the pan and cook until the cauliflower is soft – around 10 minutes
•Once it cools down, blend the cauliflower mixture and yoghurt until smooth

Use coconut yogurt to make it vegan🌱

Creamy pesto:
1 cup packed basil leaves
1/2 large and ripe Avocado
1/4 cup grated Vegan Parmesan cheese
4 cloves of garlic
3 tbsp water
2 tbsp pine nuts
1 tbsp lemon juice
Salt for taste
•Blend all the above ingredients together
