Nourish noodles 🌱
Noodles are a staple in every students home, now even in mine! And no, I am not talking about pre-packaged noodle soup, that´s something I still just do not enjoy and that is fine because I do really enjoy rice noodles as of lately. They are a nice getaway from the typical wheat or buckwheat noodles, especially when served with a rich sauce and delicious veggies. This recipe will for sure make you smile
Ingredients (1 big eater):
¼ of a broccoli, 100g rice noodles, ½ bell pepper, 1 clove of garlic, ½ an onion, 100g tofu, 1tbsp peanut butter, 1 tbsp tahini, 1 tbsp soy sauce, 50 ml water, 2 tbsp lime juice, sesame seeds, chilli flakes, olive oil, black pepper
Heat up a pan with ½ a tablespoon of olive oil. Meanwhile, chop the onion in small pieces and add to the oil. Cut the tofu into cubes, after draining and squeezing it. Add this, with the bell pepper and chopped garlic. Cut and wash the broccoli and add this to boiling water with some salt for 12 minutes. Stir the tofu and add ½ a tablespoon of thai green curry spices (check the ‘cooking tips’ highlight). Now make the sauce. In a bowl mix the PB, tahini, soy sauce and lime juice. Slowly add the water, you might need more or less. Once the broccoli is cooked, drain. Now use that pan for the rice noodles and cook according to your package. Once the noodles are done mix them with the sauce. Add some black pepper and salt to the tofu mixture and take it of the heat too. Now you can plate and enjoy!
