Nothing screams Fall like butternut squash soup! Yes I know we aren’t there yet but a girl can pretend right?! ⠀

This recipe is simple but cooking the squash is the longest part, so I recommend prepping it before! I cooked it on 350 for 1.5 hours. (Sliced in half face down) ⠀

1 large butternut squash (cooked, peeled and squared)⠀
1 tablespoon olive oil⠀
1/2 onion chopped⠀
4 garlic cloves⠀
2 stalks of oregano⠀
2 tsp garlic powder⠀
Himalayan salt⠀
3-4 cups vegetable broth⠀

-corn (not pictured but delish)⠀

—add olive oil, garlic and onion to large pot, cook until softened⠀
—add butternut squash, oregano, garlic powder, salt and pepper⠀
—mix until smoothed, mash if needed⠀
—add vegetable broth slowly until desired consistency⠀
—add to Vitamix and blend until smooth⠀
—add more broth if necessary⠀
—top with oregano, cashews and corn⠀
