Nothing like some cheesy pasta to bring on the weekend, am I right? Honestly, I can’t remember a week when I haven’t made some kind of mac n cheese ?. I decided to top this one with the apple cider caramelized onions from my grilled cheese recipe to switch things up a bit. They just go so well with any type of cheesy goodness. ?
By the way, the sauce is nut and oil-free but super creamy and oh so dreamy and delicious.

Sweet Potato Cheesy Shells with Apple Cider Onions

1 medium sweet potato, steamed* (about 1.5 cups puréed sweet potato)
1/2 block extra firm tofu**
1/2 cup full fat coconut milk
1/2 cup nutritional yeast
1 tbsp miso paste
1 tsp onion and garlic powder each
1 tsp salt or to taste
Juice of 1 lemon
1.5 – 2 cups of pasta water

1 box of pasta shells

Steam the sweet potato and cook pasta shells in saltwater. Don‘t forget to reserve 2 cups of pasta water before draining.
Add all ingredients for the sauce to a high powered blender and blend until smooth. Start with 1 cup of pasta water and increase by another half or full cup, depending on your preferences for the thickness of the sauce.
Mix cheese sauce with the hot pasta, top with caramelized onions and enjoy! ?

* I like steaming the whole sweet potato in my @instantpotofficial . Depending on its size, I cook it for ~ 30 minutes, High pressure, Manual setting on the steam rack.
** so about 7 oz or 200 g of tofu
