Not me sneaking in another autumn recipe after I promised christmas content 🤠

Pumpkin squares with vegan cream cheese icing

Hear me out;
I lost the recipe and when I found it again, I remembered the soft, dense, moist, spicy deliciousness that are those squares :”)

So I HAD to squeeze her in real quick

Recipe: makes 6 squares

55gr flour, 20gr protein, 50gr pumpkin, 40ml milk, 1tbsp sweetener, .5tsp nutmeg, .5tsp ginger, 1tsp cinnamon, 1tsp baking powder, 1/4tsp baking soda.

Peel, chop, boil and mash the pumpkin, you can save yourself some peeling and chopping time by buying frozen pumpkin OR omit all these steps all together and just use pumpkin puree ;).
Combine dry ingredients first before adding in the wet.
Place in a lined or greased flat baking tin and bake at 200° for 20-25 minutes.
They’re done when a skewer comes out clean.

50gr tofu, 50gr yog, 1tsp sweetener, 1/4tsp vanilla.

Just blend all ingredients until smooth and leave in the fridge until the squares are done, it should’ve stiffen up by thennand ready to be spread on the squares, enjoy!
