Noah’s Birthday Cake ?

I was determined to make a recipe work so I could make Noah’s birthday cake. Eggless cakes are generally pretty flat, I’ve only had fluffy success with eggless muffins!
This recipe makes one round cake, I ended up making 6 ??‍♀️ The fourth layer crumbled because I took it out the tin before it had completely cooled (way too eager!) and I didn’t think 4 cakes was tall enough.

Ingredients
120g plain flour
70g caster sugar
70g light brown sugar
1 1/2 tsp baking powder
A pinch of salt
40g Stork (the block in foil, not the tub!)
120ml Oat milk
1 flaxseed egg
1/4 tsp vanilla extract

Preheat the oven to 170 degrees.
Grease and line a tin.
Put the flour, sugar, baking powder, salt and Stork in an electric mixer and beat on a slow speed until you get a sandy consistency and everything is combined. Slowly pour in half the milk and beat until the milk is just incorporated.
Whisk the egg, vanilla and remaining milk together in a separate bowl, then pour into the flour mixture and continue beating until just incorporated. Then continue mixing for a couple more minutes until the mixture is smooth, don’t overmix!
Pour the mixture into the tin and bake in the preheated oven for 25 minutes or until golden brown. Check the cake is cooked through by sticking a warmed knife into the centre, it should come out clean.
Leave the cake to cool completely before turning out onto a wire rack.

The icing was a challenge, I would definitely add the colour layers sooner than I did so it would have been greener higher up the cake. The ingredients below make enough to ice 3 layers.

Ingredients
250g icing sugar
80g Stork (the block in foil, not the tub!)
2tbsp oatly
2 drops vanilla extract

Beat the icing sugar and stork in a freestanding electric mixer on a medium speed until the mixture comes together. Turn the mixer down. Combine the milk and vanilla in a separate bowl then add to the butter mixture a little at a time. Once all combined, beat on a high speed for at least 5 minutes. The longer, the better!
