Vegan Sugar Cookies ✨
A few hours prior to making, set out 2 sticks of butter to allow for softening.
2 sticks vegan butter (@earthbalance)
1 cup sugar
4 tbsp no dairy milk (I used oat)
1 tbsp vanilla extract
2 tsp baking powder
2.5 cups flour (GF works great)
With an electric mixer of some kind, combine the butter and sugar until thick and creamy.
Add the remaining ingredients up to the salt.
Using a spatula or by hand, fold in the flour 1/2 cup at a time.
Sprinkle a little pinch of flour on a flat surface and roll out the dough to about 1/4 of an inch thick.
Using cookie cutters, cut as many shapes as you can and remove shapes with a spatula.
On a parchment paper lined baking sheet, bake the cookies at 350 for 15 minutes or until slightly golden on the edges.
Add 1.5 cups powdered sugar to a bowl. Whisk in 2-3 tbsp of non dairy milk and a splash of vanilla.
Once cookies are completely cooled, dip cookies face down to cover in icing and top with sprinkles of your choice! 🎉
