? New Recipe! ? I’ve teamed up with @gourmetgarden_aus to create some delicious winter recipes using their amazing pastes. Here’s a recipe for stuffed sweet potatoes with roasted spicy chickpeas and a creamy garlic sauce using their Garlic Cold Blended Paste made with Australian garlic.
I can’t get enough of this paste at the moment, it stays fresh for four weeks, tastes delicious and no smelly garlic fingers from cutting it. For the roasted chickpeas, I prefer to use garlic at the start to give them a lovely sweet base but if you prefer the garlic taste more pungent add it at the end.

Gourmet Garden Stuffed Sweet Potatoes with Roasted Garlic Chickpeas and Garlic and Tahini Dressing
3 sweet potatoes, scrubbed and pierced with fork
1 tbsp olive oil
Pinch of salt and pepper to season

Roasted Chickpeas
400g chickpeas, rinsed and drained
1 tbsp olive oil
1 tsp Gourmet Garden Cold Blended Garlic Paste
1/2 tsp ground cumin
1/2 tsp turmeric
1 tsp paprika
½ tsp cayenne pepper
Pinch of salt and black pepper to season
Garlic and Tahini Dressing

1/3 cup tahini
1 tsp Gourmet Garden Cold Blended Garlic Paste
2 tbsp lime or lemon juice
1 tbsp maple syrup
¼ cup of water
Sliced spring onions, green chilli and fresh lime to garnish

Method
Preheat oven to 200C. Place sweet potatoes on baking tray, drizzle with olive oil and season with salt and pepper. Place the chickpeas in a bowl and add the garlic paste, olive oil and spices. Mix until chickpeas are evenly coated and place them in a separate baking tray.  Bake for 30 – 40 minutes until sweet potatoes are tender and chickpeas are slightly crispy. 
In the meantime make the garlic and tahini sauce. Add all the ingredients in a small mixing bowl and whisk until smooth.
Cut the sweet potatoes in half and top with roasted chickpeas. Drizzle over the dressing and garnish with spring onions, green chilli and fresh lime.
