Have you tried #banhmi, ?? Vietnamese baguette ?? Banh mi without pig liver pate and barbecued pork, it’s just a piece of plain bread with an empty soul! To make a vegan version that could capture the flavour of the original Banh mi, first of all, you need the grilled “pork”…

Ingredients ?: (yield 2 servings)
1/2 Egg plant, sliced vertically into 4 pieces (each ~0.5 cm thick)
1/2 block firm tofu
30g all-purpose flour
2 stalk lemongrass, finely chopped
1 tbsp fried garlic/ garlic powder
1 lime, zest only
A pinch of salt and pepper

Instructions ??‍?:
1️⃣ Grill the eggplant and tofu in pan with lid covered over medium-low heat, until eggplant is soften and golden yellow on both sides.
2️⃣ Transfer 1️⃣ to a bowl, mash the eggplant and tofu. Add in all the remaining ingredients. Mix well and process it into a paste consistency.
3️⃣ Heat oil in skillet over medium heat. Use a spoon to scoop the paste into the pan, and form the paste into tenderloin shape
4️⃣ Pan fry until both sides are golden brown, serve hot!
