[New Recipe] #Homemade Taiwanese Burger ??: Vegan Guabao, two ways

Ever since my first encounter with #guabao (#刈包), this super soft and fluffy steamed bun ☁️ has become my must-eat street food every time visiting Taiwan ✈️

Traditional guabao is also known as ‘tiger bite pig’ (#虎咬豬) because with a bit of imagination, the bun looks like the jaws of a tiger ? chomping on a big piece of pork belly ?

In this vegan recipe, the red-cooked pork belly is replaced by #tempeh which, when marinated with the right type of sauce, tastes as perfect as the authentic bun! ?

Ingredients (yield 4 buns)
Bao ingredients ?:
187g all-purpose flour
100g water
3/4tsp yeast
1/2tsp sugar
1tsp oil
Filling ingredients ?:
Tempeh 160g, cut into 4 thick pieces
Carrots and cucumber, shredded
Coriander, shisho leaves, roasted peanut powder
Sauces?:
1. Traditional Taiwan style – 1 tbsp soy paste, 1/2 tbsp light soy sauce, 5-6 tbsp water, 1 tbsp rock sugar, 1/2 tbsp rice wine, 2 star anise, 1 bay leaf, 1 tiny Chinese cinnamon, a pinch of Sichuan peppercorn
2. SE Asian style (inspired by @pickuplimes) – 1 orange (squeeze into juice), 3/4 tsp tahini, 3/4 tsp miso, sriracha, spicy sauce

Instructions ??‍?:
1️⃣ Cook the sauces until thicken. Marinate tempeh with the sauces for at least 1 hr
2️⃣ Mix water, yeast and sugar until dissolved. Add flour. Stir well. Let it sit for 5-10 mins. Add oil. Knead until soft & smooth. Let it rest for 1 hr or until double in volume
3️⃣ Transfer dough into floured surface. Degas. Divide into 4 even pieces. Roll into balls. Using a rolling pin, flatten each piece into oval shape (less than 1cm thick). Brush the surface area with oil and flap one end over. Proof for 30-40 mins or until double in volume
4️⃣ Steam 3️⃣ in high heat for 10 mins. Pan-fry the marinaded tempeh in medium-low heat until golden brown.
5️⃣ Pile tempehs into the buns with all other ingredients, coat tempehs with their corresponding marinade sauce
