Vegan Ricotta Stuffed Shells with a homemade easy-to-make cashew ricotta made with only 5️⃣ ingredients!

I’m not sure why it took me so long to make these! I’m actually very impressed with the way the cashew ricotta came out and shocked at how easy it was. This is the perfect dinner to make to impress a non-vegan cheese lover ? I do remember how regular ricotta tastes like and I can tell you with confidence that this version is 100% better.. BUT I’ll let you be the judge ?

* 1.5 cups raw cashews (soaked)
* 1/3 cup almond milk
* 1 Tbsp Apple cider vinegar (ACV)
* 2 Tbsp nutritional yeast
* 1 tsp minced garlic or garlic powder
* Salt to taste
