✨chocolate mousse tartelettes✨
(for 8 tartelettes and lots of leftover mousse*)

for the dough:
200g flour
30g sugar
80g margarine
30g plant milk
pinch of salt

for the mousse:
aquafaba from a can of chickpeas
pinch of baking powder
100g dark chocolate
30g agave syrup or similar
bit of vanilla extract

. combine all the ingredients for the dough and knead really well
. divide into 8 pieces. roll them out and place them in a prepared muffin tray
. use a fork to poke the dough, then bake at 180° for about 10 minutes
. add the aquafaba and the baking powder to a mixing bowl, then use a handmixer to whip it up until really fluffy
. melt the chocolate in a bath of hot water, then add it to the fluff along with the syrup and vanilla extract
. mix until well combined, then pour the mixture in the tartelettes and let set in the fridge for at least two hours

* about 1/3 of the ingredients for the mousse should suffice to fill the tartelettes, if you really don’t want some to eat by itself
. note: the baking powder is supposed to help fluffing up the aquafaba. I haven’t done a side-by-side comparison but definitely have whipped up aquafaba successfully before without the baking powder, so I’d say it isn’t absolutely necessary ?️?️
