𝐄𝐚𝐬𝐲 𝐀𝐯𝐨𝐜𝐚𝐝𝐨 𝐏𝐞𝐬𝐭𝐨 𝐏𝐚𝐬𝐭𝐚 (𝐯𝐞𝐠𝐚𝐧, 𝐠𝐥𝐮𝐭𝐞𝐧-𝐟𝐫𝐞𝐞)
1 large avocado
1/2 cup fresh basil leaves, packed
1 large clove garlic
1/3 cup raw cashews
juice of half a large lemon
1/2 tsp salt
1/4 tsp cracked black pepper, or to taste
2 Tbsp nutritional yeast
3 Tbsp extra virgin olive oil
3 Tbsp water
16 oz pasta of choice (use GF if needed)
Prepare pasta according to package’s directions.
Meanwhile, add the rest of the ingredients into a food processor. Process until smooth and creamy. Add the pesto to the cooked and drained pasta. Stir until well combined. Taste and adjust seasonings. Add more salt, pepper, nutritional yeast, and/or lemon juice if needed. Serve and enjoy!
