NANKHATAI : Ending The Week On A Sweet Note With Buttery Nan

NANKHATAI : Ending the week on a sweet note with buttery nankhatais. These are made with multi grain flour, almond flour and besan (chickpea flour).

Recipe :
1 cup Atta (I used Sujata multi grain atta. You can use regular atta that is used for making rotis)
1/4 cup + 2 tblsp almond flour/meal
2 tblsp besan
1/2 cup ghee (clarified butter) , room temperature. It should be pouring consistency, not solidified.
3/4 cup powdered sugar (icing sugar)
1/4 tsp elaichi powder (cardamom powder)
1/2 tsp baking powder
Sliced nuts for decoration

Preheat oven to 350F.

Cream ghee and sugar until smooth and fluffy. Mix all the dry ingredients.
Add dry ingredients to the wet ingredients little by little. You should have a smooth and soft dough.
Take a tablespoon of dough, roll it between your palms. Flatter gently. Take a fork/knife to make a pattern on top. Place sliced nuts. Bake for 12-15 mins until lightly browned.

Allow this to cool completely. Makes about 15-16 pieces.
