My vegan pumpkin chili recipe is here! 🎃🌱✨

This chili is loaded with healthy veggies and has the perfect balance of sweet and savory flavors.

Ingredients:
3 bell peppers (diced)
1 yellow onion (diced)
1 Tbsp olive oil
2 cloves garlic (minced)
2 Tbsp chili powder
1 Tbsp cumin
1 Tbsp pumpkin pie spice
½ tsp salt
2 cups vegetable broth
30 oz diced tomatoes
15 oz black beans
15 oz kidney beans
15 oz pumpkin purée
2 Tbsp maple syrup

Instructions:
1. Sauté the peppers and onion with the olive oil over medium heat for about 10 minutes, or until softened. Stir frequently.
2. Add the garlic and spices and sauté for another 2 minutes.
3. Add all remaining ingredients in the pot and bring to a boil. Once it has reached a boil, reduce to a simmer, cover, and let it cook for about 20 minutes.
4. Remove from heat, let it cool slightly, add your favorite toppings, and enjoy!
