My lovely Uncle Martin @martinbennett4179 sent me a cookie recipe to try so it was the perfect opportunity to try out the @loveoggs egg substitute which I’ve had in the fridge along with my new vegan dark chocolate from @littlewelshchoc. We’ve had a rubbish day and a batch of these were a complete disaster but they taste absolutely delicious whatever form they’re in and the vegan mint dark chocolate is out of this world! @littlewelshchoc is made literally just down the road from my house and I’m so pleased to have found a new delicious vegan chocolate whilst also supporting a local business 👏 These cookies won’t last the night in this house but today I need the sugar and the diet can wait! #dairyfree #dairyfreerecipes #vegan #veganrecipes #dairyfreecookies #vegancookies #loveoggs #oggs #littlewelshchocolatecompany #supportlocal #cwmbran #torfaen

Ingredients:
110g butter melted
50ml oggs aquafaba egg substitute (equivalent to 1 egg)
170g caster sugar
85g light brown sugar
200g self raising flour
100g chopped vegan chocolate of choice (I used @littlewelshchoc dark chocolate and mint)

Method:
1️⃣ melt the butter alternative and leave to cool
2️⃣ mix two sugars until combined before adding butter and egg substitute and mixing thoroughly
3️⃣ sift in flour and mix until just combined before adding in chocolate
4️⃣ mix again to form a dough and chill for 10 minutes
5️⃣ preheat oven to 200 and line w baking tray
6️⃣ divide mixture into 10 equal pieces and roll into balls
7️⃣ spread evenly over a baking tray and bake for 8-10 minutes – they will spread a lot when baking
8️⃣ leave to cool completely before moving to a cooling rack
