My LOVE, the creation I’m most happy about – pakhlava Azerbaijani style. It is greasy, sweet and absolutely delicious 😋 You will need:
🍰 600g of flour
🍰 1 teaspoon of dry yeast
🍰 1 egg
🍰 200-250g of butter ( the less fat is in the nuts – the more butter you should put)
🍰 Warm milk- approximately 1 glass but I will explain later
🍰 2 tbsp of creme fraiche/smetana
🍰 300g of hazelnut or walnut ( with hazelnut use more butter than with walnut)
🍰 2dl of sugar
🍰 250g of butter
🍰 200ml of water
🍰 200ml of sugar
🍰 1 tsp of turmeric
🍰 Walnuts for decoration

Blend the nuts with sugar and put aside. Mix the ingredients for the dough except for the milk. I didn’t follow any specific order. Add warm milk slowly until the dough is soft but not sticky. Leave the dough to raise for 1h, then separate it into 9 pieces: 2 bigger ones and 7 smaller even ones. Meanwhile melt the butter and put it to cool down so that you don’t kill the yeast. Roll 1 of the big pieces and put it on the bottom of the mould. Then cover it with butter and put one of the smaller ones on the top. Then cover it with butter and put the nut mix. Put again the dough-butter-nuts until you put the 7th layer on. Cover it with butter only and finish with the top thicker layer. Don’t cover the top layer with butter! Press everything firmly so that the layers get closer together. Cut the squares as in the picture and let it raise for 20 minutes. Then put the walnuts and put the mould in the oven at 170 degrees for 15 minutes. Prepare the syrup: melt the sugar in warm water with turmeric. Take the mould out, cut the squares again, cover everything with butter and put it back for another 10 min. When the dough becomes red – take the mould out, pour the syrup and leave it in the oven for 5 minutes. Cool the dish down and enjoy!
