My ideal lunch.. a colourful grain salad. 🌱
Just made a big batch of this for lunch today and pack lunch for our road trip tomorrow.
I love a grain salad.. the perfect healthy lunch, packed with protein and flavour. Super easy to make and keep for days in the fridge for that delicious instant snack 🌱

Ingredients:
1 sweet potato, cut into cubes and roasted
A can of black beans
1/2 can of sweetcorn
1/2 red onion, diced
1 spring onion, sliced
A small handful of fresh coriander, chopped
1/2 cup of quinoa (cooked in veggie stock)
1/2 an avocado (added separately at the end as it keeps less well) .

Dressing:
2 Tbsp olive oil
Lime juice (from 1 lime)
1 tsp cumin
2 tsps apple cider vinegar
A few drops of Tabasco
Salt and pepper
