my first recipe ive fully created by myself.. feeling accomplished.



i love baking cake and i love baking bread soo why not make a carrot cake bread? and why not make it gluten free? in no way am i gluten free BUT its fun to play around with different gluten free recipes. they always end up pretty good!!!



1.) preheat oven to 325° and spray the bottom of a small loaf pan.
2.) blend almonds and oats to make a gluten-free flour. pour to a large bowl and add salt, cinnamon, baking soda and powder, and walnuts.
3.) in a medium sized bowl, shred your carrots and add pineapple (with juice), agave, applesauce, almond milk, and coconut oil. mix well.
4.) add wet ingredients to dry ingredients and combine.
5.) pour matter in loaf pan and heat in the oven for 35 minutes before poking with a skewer to check if fully cooked. continue to cook if not done.
6.) while cooling, prepare icing. start by soaking cashews in boiling water for at least 20 minutes before blending them with confectioners sugar, apple cidar vinegar, lemon juice, and a pinch of salt.
7.) pour icing over loaf OR use it as a spread for individual slices.
8.) enjoy!
