My favourite lentil bolognese recipe?
I also made courgette spaghetti too?
Lentil sauce Ingredients;
(Serves 2)
Garlic fry light (or any other cooking spray/oil)
Lazy garlic (1tsp)
50g red dried lentils
80g onions
80g mushrooms
70g cherry tomatoes
40g celery
300g chopped tomatoes
2tbsp tomato purée
1 spring of fresh rosemary (optional)
1tbsp worcester sauce
1tbsp Maggie liquid seasoning (optional)
300ml stock
Bunch of fresh basil (optional)
1 large courgette (optional)
150g wholewheat spaghetti
Sprinkle of cheese to finish
In a large saucepan add cooking spray/oil, add the onions and cook for a couple minutes until softened. Next add mushrooms, celery, tomato’s & garlic. Leave to simmer with a pinch of salt for a further 5 minutes.
Next add Worcester sauce and Maggie seasoning combining with the veggies.
Add in the chopped tomatoes, stock and tomato purée.
Leave to simmer for another 5 minutes.
Meanwhile wash and drain the lentils with cold water and add to the pan to cook with the sauce.
Put the lid on the pan and leave to simmer for 20/25 minutes until lentils have cooked and softened. Keep stirring throughout to avoid sauce sticking to the bottom.
The last 5 minutes of cooking add chopped fresh basil to the sauce and stir to combine. Place lid back on for the last few minutes of cooking.
Serve with your choice of spaghetti and/or courgetti☺️
