Muthia Ringan Tuvar(pigeon peas)  Nu Shaak
is a delicious Gujarati dish that is mostly eaten in the winter season!

Tuvar you get mostly in the month of October to January! Fresh tender tuvar seeds are naturallysweet. Methi Muthia you can make @ home or you get it in any farsan store.This delicious vegetables of Methi Muthia and eggplant cooked with tuvar in simple and traditional Gujarati masalas. 
To give a tangy  taste and add some bulk to vegetables I have added  tomato which makes the recipe full of fresh and healthy look.

Recipe:
Ingredients

250 gms (Pigeon Peas) Green Tuvar

250 gms Diced Brinjal

8-10 pc Methi Muthia

1 Chopped Tomato

2 tsp Green Chilli – Garlic Paste

1 tsp chopped Ginger

1 tsp jeera Seeds

Pinch of Asafoetida (hing)

½ tsp Turmeric Powder

2 tsp Red Chilli Powder

2 tsp  Dhana Jeera Powder

1 tsp Garam masala

Salt to taste

1 tsp Sugar

Water

Oil

Procedure:

Heat Oil and add mustard seeds and asafoetida, Add green chilli , ginger–garlic paste.

Add pigeon peas and mix well.

Close lid and cook for 3-5 minutes.

Add the eggplant and  Methi muthia cook well.

Now add turmeric powder, red chilli powder , garam masala and dhana jeera powder.

Add salt as per taste and cook for another 5-7 minutes.

Add chopped tomato and mix well.

Add water as per requirement and cook till the mixture boils.

Add some chopped fresh coriander leaves and mix well.

Serve hot with phulka!!

 Believe me your kids will ask more. Generally children make faces by looking at baingan. Try this style of vegetable my kids have approved for baingan.
