“Must have” items to perfect your bowl game:
1. The Sauce (AKA the SAWCE!)
2. The Hero Item
In this case, my Hero Item is Hemp Seeds, caked onto my leftover tofu and sprinkled on top. Hemp Seeds snag the hero title not only for their taste and texture (slightly nutty, crunchy) but for their numerous nutritional benefits:
-rich in Omega-6 and Omega-3s (at an optimal 3:1 ratio)
-strong plant-based protein source (2 Tbsp = ~11g protein)
-easy to digest, strong source of fiber
-good source of Iron, Vitamin E, Manganese, Magnesium, B-vitamins, Zinc
I pepper hemp seeds into many of my recipes these days (smoothies, oatmeal, curries, toast toppings, etc.). If you don’t have some on hand, they’re absolutely worth picking up.
Recipe details on the defining items in this soba noodle bowl are listed below 👇
HEMP HEART CAKED TOFU
+8 oz Extra firm tofu
+2 Tbsp Hemp hearts
+2 Tbsp Tamari or soy sauce
1. Press and drain 8 oz tofu
2. Cut your tofu into strips or cubes. Toss in tamari, then roll in hemp hearts. Save unused seeds to sprinkle on top of your dish
3. Bake at 350* F for 25-30 minutes. Rotate pieces half way through.
SPICY PEANUT DRESSING
+3 Tbsp creamy peanut butter
+1 Tbsp tamari
+1 Tbsp maple syrup
+2 Tbsp lime juice
+1 Garlic clove, minced
+.25 tsp crushed red pepper flakes (the spicy tang comes from the lime juice and the red pepper. adjust as you see fit)
+1 Tbsp crushed peanuts for texture (optional, but I like it!)
+salt and pepper to taste
+.25C boiling water
1. Mix all the ingredients except the water in a mason jar, cover, and shake vigorously
2. Add hot water a tablespoon at a time to achieve the desired consistency.
Notes: this sauce recipe will produce a lot, and it will thicken over time. you can revive and adjust the consistency with hot water each time. You can also use a thicker sauce to toss and bake future tofu recipes.
