Mushroom Stuffed Potato Pancakes are the best way to use up your leftover mashed potatoes! These fluffy vegan cakes are stuffed with creamy mushrooms and fried onions. Crispy on the outside and soft on the inside, these crowd-pleasing Mushroom Stuffed Potato Pancakes will become one of your family’s favorite recipes! Have you ever met anyone who doesn’t love mashed potatoes?

👉Serving: 4 large patties
 
👉Ingredients
For the potato dough:
4 very large potatoes, cut into cubes
1 cup (120g) garbanzo bean flour
2 garlic cloves, shredded
Fine black pepper and salt to taste
 
👉For the mushroom stuffing:
2 Tbsp olive oil
1 pound Portobello mushroom, chopped
1 large onion, chopped
¼ cup fresh dill or parsley, minced
2 Tbsp vegan mayo
Fine black pepper and salt to taste
 
👉Directions
Add potatoes to a large pot and cover with water. Bring them to a boil, lower the heat and simmer for 20 minutes.
Drain the water from the potatoes.
In a large bowl, using the potato masher, mash the potatoes
Mix in shredded garlic and season with salt and pepper to taste.
In a large bowl, combine mashed potatoes with flour. Mix well and set aside.
Next, prepare the mushroom stuffing.
Preheat a medium-sized pan with oil. Add onions, cover the pan and cook on low-medium heat for 5 minutes, stir few times. Uncover the pan, add mushrooms and sauté on high heat for 3 minutes, constantly stirring.
Remove the mix from the pan. Add fresh dill, mayo, and salt and pepper to taste.
Using a slightly wet hands, divide the dough into 8 equal parts (about ¼ cup 65 g each). Next, shape the patties. Take one patty in your hands (make sure your hands are moist so dough would not stick to your hands) and add 1.5 Tablespoon of the mushroom mixture in the middle.
Cover with another patty and shape into a flat round patty.
Coat a large pan with oil and heat to medium-high heat. Carefully place the potato cakes and cook for 2 minutes on each side, or until they are lightly golden.
