Mushroom stroganoff ? ? ? ? ? ?

-1 roasted Japanese sweet potato
-1 red onion
-3 cloves of garlic
-1 tbsp avocado oil
-1 package baby Bella mushrooms
-1 package mushroom medley
-4 tbsp white wine vinegar
-1 tbsp coconut aminos
-3/4 cup veggie broth
-3/4 cup coconut creamer
-2 tbsp arrowroot
-1 tsp onion powder
-1/2 tsp garlic powder
-1 tsp smoked paprika
-salt and pepper to taste
-1 tbsp nutritional yeast
-fresh parsley for garnishing

Bake your sweet potato at 400 degrees for one hour. Let cool. In a stand mixer whip potato with salt, pepper, garlic powder, and a couple of tbsp of coconut creamer. Set aside.
In a pan heat your avocado oil and cook your onion over medium heat until soft. Add in your garlic and continue to cook for a couple more minutes. Add your mushrooms and continue to cook for 5-10 more minutes. Add your remaining sauces and spices. Cook on low heat for about ten minutes until your sauce thickens. Pour over your mashed potatoes.
