Mushroom Quinoa Salad with Veggies & Tofu πŸ˜‹πŸŒ±

150g Quinoa
100g Tofu
100g Mushrooms
1/2 πŸ†
1/2 Courgette
1 πŸ…
1/2 πŸ₯‘
1 Onion
2 Garlic
Chilli
White Wine
Salt & Pepper
Sugar
Cayenne Pepper
Sesame
Soy Sauce
Coriander

Cook Quinoa for 10-15 minutes in saltwater and then let it swell for 5 minutes.

While waiting for the quinoa, you can start cutting all the veggies and mushrooms into thin slices, except the avocado and tomato!πŸ₯‘
You can cut the tofu and tomato into cubes πŸ…

Fry all of the veggies in a pan, start off with the onion and then add the rest to it. (Only use half of your tomato for frying)
When the ingredients start getting a golden brown colour, deglaze them with white wine.
Season it, add some soy sauce and then mix everything with quinoa. πŸ˜‹
Taste before serving!

At the same time you can fry the tofu cubes, in a seperate pan, until they become golden brown. In the end, add some salt to itπŸ€—

For decorating your quinoa bowl, put in the mixed salad, make a small hole and put the Avocado rose in it. Then spread the tofu and tomato cubes over the salad and decorate everything with sesame and corianderπŸ˜‹
