Mushroom kale tacos with pumpkin tahini sauce ✨
Back to your regularly scheduled food content ! My vacation was much needed but I was dying by the end of it to get back to my own kitchen.

This makes about 6 tacos


1 small red onion – finely chopped
3 cloves garlic – minced
3–4 cups shitake mushrooms – finely sliced
4 cups kale – finely chopped
1 can green chiles
2 tbsp tomato paste
3–4 tbsp liquid aminos or soy sauce
1/2 tsp chili powder
1/2 tsp smoked paprika
1/2 cup cilantro – finely chopped
1/2 tsp cumin
pinch cayenne
1/2 tsp maple syrup
salt/pepper to taste

1/4 cup tahini
2 tbsp water
3 tbsp pumpkin puree
1 tsp chili powder
juice from 1 lime
1 tsp maple syrup
salt/pepper to taste
+ taco shells of choice and hemp seeds for topping


Heat oil in a skillet over medium heat. Add garlic and onion and cook for 5 minutes. Add all remaining ingredients except for kale and saute for 8-10 more minutes until the mushrooms have softened. Add the kale and cook until wilted.
Make your sauce by combining all sauce ingredients in a bowl or blender. Warm your taco shells and top with filling, sauce and hemp seeds.
