mushroom, kale & lemon risotto ? (gf, df, v, of)

made this up on the fly & it honesty turned out so rich, creamy & decadent! you’d never know it’s got no dairy (or vegan subs) ? i’ll be making it again for sure ?

i used my @thermomixaus to save chopping & washing up, but it’s easily adaptable to the stovetop ??‍? i also used the most gorgeous exotic mushrooms i found at costco but any mushies will do ?

ingredients:
• 240 g arborio rice ?
• 250 g button or exotic mushrooms ?
• 1 brown onion (~180 g) ?
• 1 clove garlic ?
• 2 leaves kale ?
• 1 lemon ?
• 850-900 g vegetable stock (1 cube)
• 4-5 pieces dried porcini mushrooms
• dried italian herbs ?
• pepper
• salt ?

method:
1. chop onion & garlic in thermomix 3 sec/speed 5.
2. add chopped kale stems & a splash of hot stock & sauté 3 min/120C/speed 1.
3. chop kale & slice mushrooms. zest the lemon.
4. insert butterfly whisk & add rice & dried mushrooms. cook 1 min/120C/reverse/speed 1.5, w/o mc.
5. add 60 g stock & sauté 2 min/varoma/reverse/speed 1.5, w/o mc.
6. add mushrooms & 750 g stock. scrape bottom of bowl & cook 15 min/100C/reverse/speed 1.5, w simmering basket on top.
7. add kale into basket about 3 minutes from done.
8. add kale, lemon zest & a crack of pepper & salt through the hole about 1 min from done.
9. stir through juice of 1/2 lemon. garnish w zest to serve.
