Dumplings: 100g button mushrooms (finely chopped), 100g shiitake (stems removed and finely chopped), thumb size piece ginger (minced), 4 cloves garlic (minced), 3 tbsp soy sauce, 2 tbsp apple cider vinegar, 2 tbsp water, 1 tsp flax meal, 1/2 tsp black pepper, 25 wrappers (wonton or gyoza)
Sauce: 1 tbsp sriracha, 1 tbsp soy sauce, 1 tbsp apple cider vinegar, 1 tbsp water, 1 tsp sesame oil, 1/2 tsp black pepper
To serve: 1 spring onion (finely sliced), 1 tbsp sesame seeds, handful greens, 1/4 cucumber (sliced)
1. Mix all the dumpling filling ingredients together, stirring until well combined. Place about a tablespoon of filling on each wrapper, then pleat closed making sure there are no air pockets.
2. Drop the dumplings into boiling water and cook for 5 minutes, or until they float to the top.
3. Mix all the sauce ingredients, pour over a handful of dumplings, and serve with spring onion, sesame seeds, greens and cucumber.
