INGREDIENTS ( Yields 4 servings):

🥦1 c mung beans
🥦2 c water
🥦1 tbsp olive oil
🥦1 medium potato, chopped
🥦1/2 c pepper
🥦1/2 c zucchini
🥦1/2 c mushrooms
🥦1 tsp fresh ginger,  grated
🥦Splash of lemon juice
🥦Salt to taste
🥦Love

SPICES:

🔥1/2 tsp mustard seeds
🔥1/2 tsp cumin seeds
🔥1/2 tsp turmeric powder
🔥1/2 tsp coriander powder

PREPARATION:

1.  Boil 2 c of water ,  mung beans and cook until cooked (around 30-35 min).

2.  While mung beans are cooking,  heat oil on frying pan , add mustard and cumin seeds until they start to pop. Add ginger,  all the spices, potatoe and vegetables.  Cook until tender.

3.  When mung beans are cooked, add it to vegetables and boil additional 5 min.  Remove from heat and add lemon juice.
