Mujadara. This is a middle eastern vegan dish, basically its bulgur wheat and lentils with caramelized onions.
You can always substitute the bulgur with rice, which is the original recipe or substitute it with freekah grain or even quinoa! It’s really tasty and a good source of protein and fiber. This dish is usually served with a side of salad or plain yogurt.

INGREDIENTS:

1 Cup brown dried lentils, washed
1 Cup bulgur, washed and soaked for 15 min
3 Large onions, chopped
1/4 Cup olive oil
5 Cups water
1 Tsp cumin
Sea salt and pepper
Note: do not use red lentils for this recipe, it will get mushy.

INSTRUCTIONS:

1. Heat the olive oil in a large pot over medium heat and add the onions, stir frequently until the onions turn brown and caramelized.
2. Once the onions are caramelized remove them from the pot and set aside.
3. Add the lentils and water to the same pot and boil until the lentils are soft, around 25 minutes (covered).
4. Once the lentils are ready, add the bulgur, half the amount of caramelized onions, cumin, salt and pepper.
5. Cover the pot and cook for 20 minutes on low heat.Once ready to serve add the other half of caramelized onions on top.
