MORROCAN-SPICED SALAD ?

A hearty zesty salad to brighten up your day! Super quick n easy, and looks pretty – what’s not to love? ✨
⠀⠀
INGREDIENTS (serves 2)
• 1 cup quinoa, cooked in veg stock
• 1/2 head cauliflower
• 3 baby carrots
• 1/2 cup chickpeas
• handful of greens
• 1/2 lemon, juice & zest
• 1/2 tsp of turmeric, ground coriander & cumin
• 1 tbsp olive oil
• salt & pepper to taste
• optional: olives

Preheat oven to 180C. Slice up carrots & cauli into chunks and place in a bowl with chickpeas. Mix together olive oil and spices and pour over veggies. Toss to coat veg and place on a lined baking tray. Bake for 20 min or until golden brown. Assemble salad with quinoa, greens, olives & roasted veg. Squeeze over lemon juice & sprinkle lemon zest, S&P if desired.
