Mmm! Would you like a brownie right now? What about a black bean brownie? High in fiber, and plant protein, and still deliciously chocolaty!😋

RICH INDULGENCE…..AVOCADO BROWNIE🌱OIL-FREE & GLUTEN-FREE💚

So you slice into an avocado to top on your salad, when you realize that it is over-ripe, and it just won’t do. We’ve all been there right? Well, before you think about tossing it into the garbage, check out this recipe for a delicious pan of avocado brownies……yum!

1 over-ripe avocado mashed
1 cup coconut milk
3/4 cup coconut sugar

1 cup all purpose flour (I used gluten-free) Spelt should work well too!
1/2 cup raw cacao powder
1/2 tsp salt
1 tsp baking soda
1/2 cup chocolate chips

Preheat oven to 350 F. Mix wet ingredients and sugar until smooth.

Then mix dry ingredients in a separate bowl Add dry mixture to wet slowly, mixing well. Stir in chocolate chips.

Pour into a parchment paper lined 8×8 baking tray, add some chocolate chips on top, and cook for 25-30 mins, until a toothpick comes out clean.

Allow to cool before slicing. Refrigerate……they taste even better the next day. Enjoy!
