Mixed squash curry!! 🎃🍛 We had plenty of squash left from our katsu so used some for this curry! Josh actually also trusted me to make this (with v detailed instructions lol but means I have a recipe to post!!) 👩🏻‍🍳

• 4 brown onions
• 5 cloves of garlic
• 1.5 inch piece of ginger
• 3 tbsp curry powder
• 1 tbsp cumin
• 1 tbsp coriander
• 1 tbsp garam masala
• 1 tsp turmeric
• 1/2 tsp fenugreek
• 1 tbsp tomato purée
• 1 can chopped tomatoes
• 1 can coconut milk
• 500 mL veg stock
• Preferred amount of squash/sweet potato/pumpkin etc (didn’t weigh it just added enough until it looked like a good amount – soz!!)
• Juice of 1/2 lemon

1. Cut each onion into quarters, break apart and fry until cooked
2. Add in garlic and ginger and fry for a few min
3. Add all of the dried spices and fry for 1 min
4. Add tomato purée, chopped tomatoes and coconut milk and simmer for 1 hour
5. Add in the squash and the stock, ensuring the squash is covered
6. Cook until the squash is soft, adding water to keep the squash covered if required
7. Add in lemon juice and season!
