🍜MISO GINGER RAMEN🍜

you guys😩 this dinner brought me right back to my childhood. i lived off ramen noodles🥴🥴 but this is a ~healthier version and it’s SO easy. bought everything from trader joe’s🙌🏼

INGREDIENTS:
1 cup carrots
1/2 cup celery
1/2 white onion chopped
1 tbsp minced garlic
1/2 cup of edamame
1 cup mushrooms
1 box of ginger miso broth
handful of spinach
2 containers of @traderjoes miso instant ramen noodles (use 1 packet of seasoning + both noodles)
2-3 cups of water
green onion (for topping)
salt + pepper

*add the first 4 ingredients to a pot with some olive oil. 5 minutes later add the edamame, mushrooms, and broth. a few minutes later add the spinach, noodles, and seasonings. next add water and cover- let it simmer for 10 minutes. serve with chopped green onion!
