M’hencha, Arabic for “coiled like a snake,” are traditional Moroccan pastries that can be made sweet or savory. This recipe by @veganlass1 can be served hot or cold with whatever sides you like.⁠

Ingredients⁠
For the Pastry:⁠
6 sheets of vegan filo pastry⁠
For the Feta:⁠
1 1/3 cups blanched almonds, soaked in water and refrigerate for 24 hours prior to making the feta⁠
1/2 cup lemon juice⁠
Scant 1/4 cup water⁠
3 tablespoons extra virgin olive oil⁠
5 garlic cloves, peeled⁠
4 tablespoons nutritional yeast⁠
1 1/2 teaspoon ground sea salt⁠
For the Spinach Filling:⁠
2 tablespoons extra virgin olive oil, plus extra for brushing⁠
5 garlic cloves, minced⁠
4 white or brown onions, finely sliced⁠
16 ounces spinach, roughly chopped⁠
1/3 cup cashew cream or any vegan cream⁠
2 handfuls of fresh dill, finely chopped⁠
2 handfuls of fresh parsley, finely chopped⁠
A few grates of fresh nutmeg, to taste⁠
Ground sea salt and cracked black pepper⁠
