Super easy lunch or dinner that’s healthy(ish) and so good! I love making stuffed peppers, and these Mexican inspired ones are probably my faves so far. All the good Mexican flavours I love, plus lots of cheese (important!), plus alllll the toppings. Enjoy!

4-5 large bell peppers
1/2 cup quinoa
1 tin kidney beans
1 tin sweetcorn
1/2 tin chopped tomatoes
2 garlic cloves
1 red onion
2 tbsp Mexican spice mix
1/2 tsp smoked paprika
150g shredded cheddar
Vegetable or olive oil
Sour cream, avocado & coriander for topping

1️⃣ Cook the quinoa according to package instructions (I always add a little veg stock powder to the water to give it more flavour). Preheat oven to 200C.
2️⃣ Finely chop the onion & mince the garlic and saute in some oil over medium heat until translucent. Add the cooked quinoa, beans, sweetcorn, tomatoes and spices. Fry for a couple of minutes.
3️⃣ Halve the peppers lengthwise, take out the seed and transfer them to a baking dish. Fill each pepper with the filling and sprinkle the cheese over top. Transfer to the oven and bake for 25-35 minutes, or until the peppers are tender and the cheese melted.
4️⃣ Serve with a generous amount of sour cream, sliced avocado and lots of coriander.
