It’s been a two coffees kinda day today! But after a busy morning I am home and made Mexican for me and my mum. I’m trying to use the last few things in my cupboards before returning to uni and found a tin of black beans in a draw πŸ™ŒπŸΌ that called for Mexican of course!
Mexican and Indian cuisine are my ultimate fave because i think it’s the easiest to get a variety of dishes in a meal. This is no exception! I kinda just chucked a load of spices in and hoped for the best and it really worked! Not sure they are exactly β€˜Mexican’ spices but πŸ€·πŸΌβ€β™€οΈ Definitely gonna have this again soon! 😍

– Black Beans (with some of the bean juice πŸ€ͺ)

– Red Pepper

– Mild Chilli Powder
– Paprika
– Garam Masala
– Ground Cinnamon

Salsa:
– Cherry Tomatoes
– Cucumber
– Spring Onion

Sides:
– Avocado (obvs πŸ€ͺ)
– Sweetcorn
– Spring Onion
– A dash of coriander
