Messy Spaghetti with Spicy Tomato Sauce, Sautéed Vegetables & Capers 🍅

INGREDIENTS —–
[serves 2]

250 g gf Spaghetti
150 ml spicy tomato sauce [make it yourself using chopped tomatoes canned, garlic, oregano, tomato puree, salt, pepper, sriracha / chilli flakes – cook in a small pot until reduced & thickened]
2 carrots sliced
6 mushrooms of choice
2 garlic cloves
1 small shallot
3 tbsp olive oil
2 tbsp capers
fresh parsley
unrefined salt and freshly ground black pepper
rucula
vegan grated mozzarella

Method – – – – –

Sautee onion & Garlic with small amount of oil and salt. Add carrots and mushrooms and continue sautéing until veggies are al dente. Season to taste.

Cook pasta as per instructions on package.

Combine pasta with tomato sauce & sauteed vegetables. Mix in capers and rucula, drizzle with olive oil. Garnish with vegan grated mozzarella and black pepper.
