Menestra de verduras/ Spanish vegetable stew
Menestra is one of the irreplaceable dishes of Navarra cuisine. Menestra can be served as a side dish to fish or meat, or as a main course in its own. The great thing about this dish is that you can use whatever vegetables are in season at the time.
Chopped veggies (Carrots, green beans, artichoks, green peas, turnip, corn)
4tbsp olive oil
1 yellow onion
Salt to taste
Saute onions and then add carrots and stir. Cover mixture with water and let the carrots cook. When the carrots are half done, add turnips and green beans and let them cook until soft but not mushy. Add some salt.
Once the fresh veggies are cooked, now add the artichoke hearts, corn and peas and stir. Make sure the artichoke hearts, corn and peas are completely heated before serving.
