? Summer’s here ☀️ and in the words of @iamtabithabrown ‘Get into it!’ This refreshing fresh herb salad with toasted zaatar bread is the perfect summers meal from the heart of the mediterranian. If we can’t travel yet, we might as well eat like we’re abroad right?! Shout out to the amazing @eyaltomato for the plating inspiration!

3-4 medium sized tomatoes of choice
3 large handfuls of cherry tomatoes
½ cup of fresh basil leaves
¼ purple onion
Zaatar spice
½ a small garlic clove
Lemon juice
Olive oil
Sea salt
Small handful of black kalamata olives
Sliced almonds or pine nuts

Step 1. Cut the tomatoes into round slices arranging them into a ring around the outside of a plate. Crush the garlic in a bowl and add approx. 2 tbsp olive oil, a splash of lemon juice and mix. Evenly pour the marinade over the ring of tomatoes. Then sprinkle salt and generously sprinkle zaatar over the tomatoes.
Step 2. Slice the cherry tomatoes in halves and place in a bowl. Thinly slice the red onion, tear the basil leaves and add the olives to the bowl. Pour approx. 1 tbsp of olive oil into the bowl and the juice of ¼ lemon. Add a sprinkle of salt and mix. Transfer the cherry tomato salad into the middle of the tomato ring and garnish with sliced almonds.
Step 3. Heat approx 1 tbsp olive oil on a frying pan. When hot, place the bread onto the oil on the pan. Turn the bread after a min and spread ½ tsp of zaatar across the top side. When the underside of the bread has become toast like (after approx 2 minutes) flip the bread so the zaatar side of the bread is now cooking. Spread ½ tsp of zaatar across the top toasted side. When the underside of the bread is also toasted remove and enjoy straightaway! Don’t forget to add sliced avocado to the mix!
