MEDITERRANEAN UPSIDE DOWN VEGGIE & FETA TART 🍆
This is such a good weeknight dinner that’s honestly SO easy to make. All you need is a baking dish, lots of seasonal veggies, puff pastry and some cheese if you like. You basically just need to throw it all in the oven and it’s DONE!
1 summer squash
1 small aubergine
1 large red bell pepper
1-2 red onions
250g cherry tomatoes
1 sheet of puff pastry
A few sprigs of fresh oregano (could also use dried)
1 block feta cheese (optional)
1️⃣ Preheat the oven to 200C. Cut up all the veg into bite-sized pieces and transfer to a baking dish. Drizzle with olive oil and season with salt, pepper and oregano. Bake for 30-40 minutes until the veggies are soft and fragrant.
2️⃣ When the veggies are soft, take the baking dish out of the oven. If using cheese, cube the feta and mix it with the veggies. Then push the veggies slightly into the middle of the baking dish, leaving a gap of about 2cm along the edges. Place the puff pastry over the veggies and tuck it in along the edges. Bake for another 20 minutes until golden brown. To serve, simply loosen the puff pastry where it’s stuck to the baking dish, place a cutting board on top and flip. The tart should come right out. I like to crumble a little extra feta over top before serving!
