I like to joke that the future of meat is mushrooms, but when I have these meaty oyster mushroom skewers, I’m not sure if I’m joking anymore.

300 g oyster mushrooms;
6 – 8 small-medium potatoes, washed;
Leafy greens for the salad
¼ cup low-sodium Tamari or soy sauce;
2 tbsp olive oil;
1 ½ tbsp maple syrup;
Juice of ½ lemon (or 1 smaller lemon);
4 garlic cloves, finely minced;
1 tsp smoked paprika;
½ tsp ground cumin;
Dill & garlic cashew sauce:
1/3 cup cashews, boiled for 2-5 minutes (water drained);
1/3 cup water;
Juice of ½ lemon;
¼ tsp garlic powder;
¼ tsp dried dill tips
